Cauliflower and zucchini fritters

Ingredients for 2 servings:

  • 1 vegetable onion(s)
  • 200 g cauliflower
  • 160 g zucchini
  • 20 g Parmesan, grated
  • 75 g cheese, grated
  • 2 eggs
  • salt and pepper
  • nutmeg
  • chili flakes

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Low-carb

Wash and trim the onion, cauliflower, and zucchini, then finely chop or grate. Season with pepper, salt, nutmeg, and chili flakes to taste and let stand for 20 minutes. Drain the liquid. Add the Parmesan and grated cheese, mix well, and season to taste. Stir the eggs into the mixture. Preheat the oven to 200°C (400°F). Place 8 equal-sized piles on a baking sheet lined with parchment paper and flatten them slightly. Bake at 200°C (400°F) for 15 minutes. Nutritional information per puff (for 8 puffs): 70 kcal, 4.0 g fat, 5.4 g protein, 2.7 g carbohydrates, 1 g fiber.
