Cauliflower in Roquefort

Ingredients for 4 servings:

  • 1 cauliflower
  • 1 liter vegetable broth
  • 1 tbsp vinegar
  • 1 cup(s) brown rice
  • 2 tbsp flour (whole wheat flour)
  • 1 tbsp butter
  • 200 g cheese (Roquefort)
  • 3 egg yolks
  • 3 egg whites
  • 150 g butter
  • 100 g cheese, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Briefly cook the cauliflower in the broth and vinegar. Cook the rice in 2.5 cups of the cauliflower broth until it is tender. Heat the flour in a dry pan. Let it cool, then add 3 ladles of cauliflower broth and bring to a boil. Add the butter, Roquefort cheese, and the cooked rice. Stir in the egg yolk and the stiffly beaten egg whites. Season to taste. Transfer the mixture to a greased baking dish, place the cauliflower in the center, and drizzle with melted butter. Bake in the oven at 200°C for 20 minutes. Sprinkle with cheese and serve.
