Cauliflower with cheese sauce

Ingredients for 4 servings:

  • 500 g cauliflower, cut into florets
  • some salt and pepper, white
  • 125 g butter
  • 4 tbsp mountain cheese, grated
  • 1 pinch of nutmeg
  • 1 tsp lemon juice
  • 2 egg yolks
  • 125 n. B. sweet cream
  • 1 tbsp parsley, finely chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Preheat oven to 180°C. Cook the cauliflower florets in lightly salted water for about 10 minutes, or until al dente. Drain and let drain well. Melt the butter in a saucepan. Remove from the heat. Stir in 3 tablespoons of cheese. Season with salt, pepper, nutmeg, and lemon juice. Then vigorously beat in the egg yolk and cream, heat briefly, but do not let it boil. Caution: Do not allow the sauce to boil, or the yolk will curdle! Arrange the cauliflower florets in an ovenproof dish and pour the cheese sauce over them. Sprinkle with the remaining cheese and bake in the oven for 15-20 minutes until golden brown. Sprinkle with parsley.
