Celery burger with herb dip

Ingredients for 4 servings:

  • 1 celeriac
  • 2 cup(s) brown rice, cooked and cooled
  • 2 eggs
  • salt and pepper
  • Breadcrumbs
  • oil
  • 2 cups sour cream
  • 1 bunch parsley, finely chopped
  • 1 bunch chives, finely chopped
  • Vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the celery, cut it into small pieces, and cook them in a little salted water until tender. Drain, mash it with a fork, and mix it with the cold rice and eggs. Season with salt and pepper, and stir in some breadcrumbs if the mixture is too wet. Form the mixture into burgers and fry them in oil until golden brown on both sides. Mix the sour cream with the finely chopped herbs and season with vinegar, salt, and pepper. Other herbs can be added if desired, but parsley and chives are the basic herbs. The celery burgers taste best when they’re still hot; the sweetness creates a delicious contrast to the spicy dip.
