Ingredients for 1 servings:

  • 4 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 2 tbsp black peppercorns
  • 12 cardamom pods
  • 1 tsp, heaped cloves
  • 3 stalk(s) cinnamon
  • 10 curry leaves
  • 10 stalks of lemongrass
  • 1 tbsp rice, uncooked
  • 1 tbsp mustard seeds

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Spice mix for meat, fish and vegetarian food.

Roast all ingredients in a non-Teflon pan without fat until nicely browned. Add the coriander and cumin towards the end. While the mixture is still hot, grind it in a coffee grinder or blender and stir thoroughly. This is a strong curry powder. The cumin is particularly hot, so handle it carefully. Tip: Add a teaspoon of fennel seeds, if desired. For a truly spicy mix, add chili peppers.
