Cheese and leek soup (vegetarian)

Ingredients for 4 servings:

  • 1 onion(s), diced
  • 2 stalk(s) leeks
  • 2 bell peppers, finely chopped
  • 3 cups of processed cheese
  • e.g. vegetable broth
  • n. B. herbs
  • salt and pepper
  • sweet peppers

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Sauté the onions until lightly browned. Then add the leeks and bell peppers and sauté until slightly softened. Season with pepper and paprika and add broth until the vegetables are covered. Bring everything to a boil, then add the processed cheese. Stir until the cheese has dissolved. Season to taste with herbs and spices.
