Ingredients for 3 servings:

  • 40 g butter
  • 40 g flour
  • 2 onions
  • 500 ml broth
  • 100 ml white wine
  • 80 g cheese, grated Gruyère
  • 80 g cheese, grated Comte
  • 50 ml sweet cream
  • oil
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Slice the onions into half rings and fry in a little oil until golden brown. Melt the butter in a saucepan and stir in the flour. Remove the pan from the heat and gradually stir in the stock and wine until the soup is thick and lump-free. Return the pan to the heat and melt the cheese, stirring constantly. Season with salt, pepper, and grated nutmeg. Whip the cream until semi-soft and stir into the soup. Ladle the soup into bowls and top with the fried onions.
