Ingredients for 4 servings:

  • 500 g flour
  • 2 eggs
  • ⅛ liter of water
  • 1 tbsp salt
  • 1 onion(s)
  • 250 g cheese, grated
  • Butter or oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Home cooking

Mix flour, eggs, water, and salt into a firm dough and rub it through a sieve into boiling salted water. If you don’t have a sieve, you can also use teaspoons to drop the dumplings into the water one at a time (they should be quite small, though). Let them cook in the boiling water until all the dumplings have risen to the surface. This takes about 5 minutes. Meanwhile, peel and finely chop the onion, and sauté it in butter or oil. Place the dumplings in the pan over low heat, mix with the grated cheese, cover, and let the cheese melt. Serve immediately. Tip: For a more rustic touch, simply fry the cheese until crispy. You can also easily adapt the recipe—for example, add bacon to the pan or simply try different types of cheese. This recipe is also known as “Hüttenessen” (cottage food).
