Cheesecake low carb, low cal and high protein

Ingredients for 8 servings:

  • 500 g low-fat curd cheese
  • 300 g light cream cheese
  • 225 g skimmed milk yogurt
  • 175 ml milk
  • 4 eggs
  • 150 g erythritol (sugar substitute)
  • 70 g protein powder
  • 1 tbsp coconut flour, approx. 15 g
  • 8 g locust bean gum
  • 400 g of fruit of your choice: apples, bananas, grapes, blueberries…

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 15 minutes

Preheat the oven to 160°C (top/bottom heat). Mix all ingredients, except the fruit, with a mixer. Pass the locust bean gum through a sieve while stirring, sprinkling in the: Now prepare the fruit: core the apples and cut them into wedges, slice the bananas… you know how. During this time, the batter will thicken slightly and air bubbles can rise. Now pour half of the batter into a greased or lined 26cm springform pan. Depending on your preference, add all of the fruit and spread the remaining batter on top, or add just some of the fruit, cover with the remaining batter, and top the cake with more fruit. Now bake the cake on the middle rack for approx. 60 minutes until golden brown. Let the pan cool completely before removing the cake. If you cut the cake into 8 pieces, one piece has 237 kcal and 24 g of protein. Of course, it depends on the fruit you use. With 400g of banana it will probably be a bit more, but with apples, pears, grapes, etc. it will be fine.
