Ingredients for 1 servings:

  • 1 vanilla pod(s)
  • 1 orange(s)
  • 250 g cranberries, dried
  • 125 g margarine (semi-skimmed)
  • 220 g sugar
  • Salt
  • 4 eggs
  • 1 kg low-fat curd cheese
  • 1 pack of pudding powder, vanilla
  • 2 tsp, leveled baking powder
  • 5 tbsp semolina (wheat semolina

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the vanilla pod and scrape out the seeds. Wash the orange under hot water, dry it, and finely grate the zest. Squeeze the orange, warm the juice, and soak the cranberries in it. Beat the margarine, sugar, vanilla seeds, orange zest, and a pinch of salt until fluffy. Gradually stir in the eggs. Then stir in the quark, pudding powder, baking powder, and semolina one after the other. Finally, fold in the cranberries. Place the batter on a baking sheet lined with baking paper and bake in a preheated oven at 180°C (160°C fan oven) for 50 minutes. Halfway through baking, reduce the temperature to 150°C (130°C fan oven). Turn off the oven and let the cake cool completely. Then remove the cake, cut into small squares (2x2cm), and place in praline capsules. Decorate with caramelized orange peel, if desired.
