Ingredients for 1 servings:
- 135 g almonds, ground
- 160 g powdered sugar
- 85 g flour
- 8 egg whites
- 1 pinch of salt
- 150 g butter
- 210 g cherries

Recipe for using egg whites
Preheat the oven to 200°C (top/bottom heat). Butter and flour a friand tin or muffin tin, or place paper baking cups in the holes. Briefly beat the egg whites with a pinch of salt with a hand mixer; do not beat stiff peaks; they should only be slightly foamy. Mix the ground almonds, powdered sugar, and flour and quickly stir into the beaten egg whites. Finally, mix in the melted butter. Pour the batter into the tins. Pit and halve the cherries. Place a few cherry halves on each friand, or, for mini friands, place a whole cherry in each piece. Bake in the preheated oven on the middle rack for about 25-30 minutes until golden brown. The friands should give slightly when pressed. Remove from the oven and let cool in the tin for 5 minutes, then transfer to a wire rack and let cool completely. Sprinkle with powdered sugar and store in an airtight container. Tip: Half the batter yields 8 friands in 80 ml muffin tins or about 14 mini friands in mini muffin cups. Baking time is then only about 18 minutes.
