Ingredients for 4 servings:
- 200 g flour
- 100 g butter
- 5 eggs
- 250 ml sour cream
- 400 g chicken breast
- 75 g ham, diced
- 7 cocktail tomatoes
- 1 spring onion(s)
- some Worcestershire sauce
- Garlic
- Paprika powder
- salt and pepper
- Parsley
- Flour for the work surface
Instructions
Working time approx. 15 minutes; Rest time approx. 1 day 6 hours; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 6 hours 45 minutes
Knead the flour, butter, and an egg with your hands. Once the dough is smooth, let it rest in the refrigerator for 30 minutes. Dice the chicken breast, wash the spring onions and tomatoes. Finely chop the spring onions, and cut the cherry tomatoes into eighths. Add everything to the pan with a little oil along with the diced ham and season. Use salt sparingly, as the ham is already salty. It’s best to add a little garlic, a few dashes of Worcestershire sauce, parsley, a little paprika, and pepper. Simmer everything for about 15 minutes. Roll out the dough on a floured surface to the size of the tart pan and place it in the pan. Line the edges with dough up to the top of the tart pan. Then whisk the remaining eggs with the sour cream and spread it over the dough along with the contents of the pan. Bake the quiche for about 30 minutes at 180°C.
