Chicken and walnut casserole

Ingredients for 4 servings:

  • 600 g chicken breast fillet(s)
  • 2 handfuls of walnuts
  • 3 cloves garlic
  • 1 m.-sized onion(s)
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), red
  • 250 g mushrooms
  • 200 ml cream
  • 200 g cheese, grated
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp cumin

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat oven to 180°C (top/bottom heat). Cut the chicken breast fillets into pieces. Clean and slice the mushrooms. Trim the bell peppers and cut them into medium-sized pieces. Peel and finely chop the onion and garlic. Roughly chop the walnuts. Place all ingredients in a medium-sized baking dish. Add the spices to the cream and mix. Then pour over the ingredients in the dish and mix everything together. Finally, add the grated cheese and fold in just a little. Bake in the hot oven on the middle rack for about 30-40 minutes, until the cheese is nicely melted and the meat is cooked.
