Chicken Breast with Parsnip Hash Browns and Broccolini
The perfect chicken breast with parsnip hash browns and broccolini recipe with a picture and simple step-by-step instructions.
Chicken breast:
- 300 g Flour
- 6 tbsp Paprika powder
- 6 Pc. Chicken breasts
- 100 g Butter
- 160 ml Soy sauce
- 180 ml Lemon juice
- 180 ml Mango juice
- 250 ml Italian salad dressing
- 1 Pc. Lemon zest
- 4 Pc. Garlic cloves
- Salt and pepper
Parsnip hash browns:
- 600 g Potatoes
- 300 g Parsnip fresh
- 60 g Butter
- 100 g Parmesan
- 2 tsp Rosemary
- Salt and pepper
Broccoli with pancetta, walnuts and lemon:
- 1 bunch Fresh broccoli
- 2 tsp Olive oil
- 6 Pc. Pancetta belly bacon slices
- 35 g Walnuts
- 20 g Butter
- 1 Pc. Lemon fruit juice
Chicken breast:
- Preheat the oven to 200 degrees circulating air.
- For the sauce, stir well the soy sauce, lemon juice, mango juice, dressing, lemon zest, garlic, as well as salt and pepper in a container and then chill for 30 minutes.
- Meanwhile mix the flour, paprika, salt and pepper in a bowl. Turn the fillets in the flour and place in a baking dish. Brush each part generously with melted butter. Then bake for 30 minutes.
- Turn the fillets over, distribute the chilled sauce evenly over them, then bake for another 20-25 minutes until they are cooked through.
Parsnip hash browns:
- Preheat the oven to 180 degrees.
- Peel and roughly grate the potatoes and parsnips, then mix with the melted butter, rosemary, cheese and salt and pepper and divide into portions. Place the portions on a baking sheet lined with baking paper and press flat. Bake in the oven for 35 minutes until the rösti turns golden brown and looks crispy.
Broccoli with pancetta, walnuts and lemon:
- Bring a saucepan of salted water to a boil. Add the florets and stems and cook for 3-4 minutes until they are firm to the bite. Drain and soak in ice water. Drain and dab again.
- Heat the olive oil in a pan, then fry the pancetta for 7-10 minutes at medium temperature until crispy. Add the broccoli and walnuts. Add butter and lemon juice and mix all ingredients well. Season with salt and pepper.
