Chicken breast with warm tomato salad

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 4 tomatoes, cut into pieces
  • 1 small onion(s), finely diced
  • 1 shot of balsamic vinegar
  • salt and pepper
  • Spice(s) (herb steak seasoning)
  • Paprika powder
  • basil
  • oregano
  • some rapeseed oil or sunflower oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Season the chicken breast fillets to taste. I use salt, pepper, a little paprika, and herb steak seasoning. Fry in a pan with a little oil. Remove the cooked chicken from the pan. Add the finely diced onion to the chicken pan and fry until translucent. Chop the tomatoes, add them, and sauté briefly. Deglaze with a small splash of balsamic vinegar and season to taste with a little pepper, basil, and oregano. If you like, you can also spice the tomatoes. Serve the warm tomato salad with the chicken breast on a plate.
