Chicken Curry After Aunt Ruth

- 2 piece Chicken or Chicken
- 750 g Basmati rice
- 1 Glass Pickled cucumbers
- 1 Glass Sour fish
- 2 piece Oranges / oranges
- 3 piece Peach (fresh or pickled)
- 3 piece Apple
- 100 g Raisins
- 50 g Coconut flakes
- 100 g Hazelnut, crushed
- 100 g Walnuts, crushed
- Curry hot
- Saffron
- Fresh ginger
- Sweet paprika
- Pepper from the grinder
- Salt
- Coarsely chop the chickens and fry them briefly over high heat.
- Cut the onions with sugar and fry them in olive oil until they are slightly translucent. When frying the onions, add a little more water. The onions cook faster and brown very well thanks to the sugar without burning.
- Put the onions and chicken in a saucepan (also known as a pressure cooker). Add 1 teaspoon salt and 2 teaspoons curry per chicken and cover with water. If you don’t like it spicy, you should be careful with the curry. To refine, add 3-4 thinly sliced fresh ginger.
- Steam the chicken on medium heat for at least 1 hour. With the pressure cooker, approx. 20 minutes are sufficient, but then let it steep for another 15 minutes. After steaming, remove the chicken pieces, separate the meat from the bone and chop it up to size. Put the meat back into the stock and season again properly with pepper and paprika as required.
- Put the basmati rice in cold water and wash until the water is no longer or is only slightly cloudy. Now put the rice in cold water and add a pinch of saffron. Let the rice ripen over medium heat and cook until it is sticky. Mix in 2-3 flakes of butter shortly before the end of the cooking time. In this way, it will be 3 times as large and light to dark yellow depending on the amount of saffron.
- Chop all other ingredients, sour fish, pickled cucumbers, oranges, pickled or fresh peach, etc. and divide into individual bowls with spoons. Arrange the hazelnut and coconut flakes and pieces of walnut in small bowls as well. Mix the raisins with the apple pieces.
- When everything is ready, serve the chicken hot with the rice and put the ingredients on the plate as you like and combine them as you like.
- What – sour fish raisins and orange? That is not how it works! You should show more courage. The taste experience is really good. In India, a lot is mixed up too. That tastes good too. So go ahead and enjoy your meal.
