Ingredients for 4 servings:
- 150 g spring onions
- 250 g turkey breast or chicken breast fillet
- Salt and pepper, white from the mill
- 40 g clarified butter
- 1 tbsp flour
- 2 tbsp curry powder, mild
- 625 ml chicken stock
- 200 ml cream
- ½ lemon(s), the juice
- 2 tbsp Worcestershire sauce
- 2 stalks parsley, flat

Clean the spring onions and slice them into thin rings. Cut the meat into very fine strips and season with salt and pepper. Heat the clarified butter in a saucepan and brown the meat. Add the spring onions and sauté. Dust with flour and sauté. Stir in the curry powder. Deglaze with the broth and cream. Simmer the soup over low heat for 8-10 minutes. Season to taste with salt, pepper, lemon juice, Worcestershire sauce, and curry powder, if desired. Garnish with parsley leaves.
