Chicken curry with apples

Ingredients for 4 servings:

  • 350 g chicken breast fillet(s)
  • 1 onion(s)
  • 5 small apples (baking apples)
  • pepper
  • Salt
  • 2 tbsp clarified butter
  • 5 tsp curry
  • 1 tbsp flour
  • ¼ liter chicken broth
  • 200 g whipped cream
  • 250 g rice (basmati)
  • 2 tbsp almonds, chopped

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash and dice the chicken breast fillet. Slice the onion into thin rings. Peel, core, and thinly slice the apples. Brown the onions and chicken breast in clarified butter, add the apples, and fry briefly. Season with salt, pepper, and 3 teaspoons of curry powder. Sprinkle with flour, pour in the stock, stir, and simmer over low heat until the apple pieces are tender. Meanwhile, add the rice with twice the amount of water and 2 teaspoons of curry powder and let it swell until tender. Toast the chopped almonds in a separate pan without oil and remove from the heat. When the apples are tender, add the cream to the chicken pan, season to taste, add the curry rice, and the toasted almonds, and stir in. Done!
