Ingredients for 1 servings:

  • 130 g chicken breast fillet(s)
  • 140 g boiled potatoes
  • 60 g cooked butternut squash flesh
  • Rapeseed oil
  • Vanilla salt
  • pepper
  • chili powder

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Fry the chicken fillet pieces in a pan in hot oil on both sides. Remove from the pan, place on a plate, season with salt and pepper, and set aside. Peel the potatoes and mash them in a bowl with a fork. Add the pumpkin flesh and mix well. Season to taste with salt, pepper, and chili. Take some of the vegetable mixture from the bowl and place a piece of meat on top. Cover with more mixture and, using wet hands, form a meatball. The meat should no longer be visible. Fry the meat and vegetable meatballs on both sides in hot oil in the pan. Arrange on a platter, garnish, and serve. Serve with a salad of your choice for a quick meal.
