Ingredients for 1 servings:
- 1 chicken breast fillet(s) or turkey breast fillet
- 1 baguette(s)
- 20 g slice(s) of Gouda
- 50 g herb butter
- 4 tsp Parmesan
- 2 eggs
- 50 g flour
- 50 g breadcrumbs
- 2 pinches of salt
- 2 pinches of pepper
- 2 pinches of paprika powder
- 50 ml dressing, e.g. yogurt and herb sauce
Instructions
Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes
Cut the chicken or turkey breast into small medallions. Whisk the two eggs and add salt, pepper, and paprika. Bread the medallions: flour, eggs, and breadcrumbs. Fry the medallions in oil. Place the finished medallions on a plate lined with kitchen paper to drain the fat. Hollow out the baguette; you won’t need the insides. Wrap the medallions in the Gouda cheese. Cut the baguette into four pieces and place the medallions in the center of the baguette. Melt the herb butter and add the Parmesan cheese, whisking everything together well. Place the baguette on a baking sheet lined with aluminum foil and brush it with the herb butter. Wrap the baguette in aluminum foil and bake in a preheated oven at 175°C (top/bottom heat) for 20 minutes. Tip: To prevent it from being too dry, you can dip it with a yogurt and herb sauce/dressing.
