Ingredients for 3 servings:

  • 1 organic soup chicken
  • 2 bay leaves
  • 2 tbsp salt
  • 2 carrots, freshly sliced
  • 2 medium-sized onions, quartered
  • 1 m.-large kohlrabi, sliced
  • 1 bunch parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 3 hours 10 minutes; Total time approx. 3 hours 40 minutes

Place the chicken in a large pot of water with the salt, onion, and bay leaves and simmer for about 2.5 hours. Place the cooked chicken on a plate. Add the shredded vegetables to the chicken broth and simmer for about 30 minutes. During this time, remove the chicken from the bones. Add the meat to the soup. Wash and finely chop the parsley. Let everything simmer for another 10 minutes.
