Ingredients for 4 servings:
- 4 chicken thighs, about 1 kg (marinated)
- 2 bell peppers, colored
- 4 tomatoes
- 100 g mushrooms
- 1 handful of Italian herbs, fresh or freeze-dried
- 1 onion(s)
- 3 garlic cloves
- 4 large potatoes
- 2 tbsp olive oil
- 2 tbsp pesto (basil pesto and/or wild garlic pesto)
- salt and pepper

Season the chicken thighs with salt and pepper and place in a large casserole dish. Peel and dice the potatoes, place them in a bowl, and marinate them with the pesto. Finely chop the onion, garlic, vegetables, and mushrooms and arrange them around the thighs. Add the potatoes and sprinkle generously with herbs, salt, and pepper. Drizzle with olive oil and roast at 180°C for about 1 hour, until the potatoes and chicken thighs are tender, turning everything over several times. Preparation takes about 15 minutes. The whole thing is ready in about 2 hours.
