Chicken with pineapple

Ingredients for 3 servings:

  • 2 chicken breasts
  • 1 egg(s)
  • 3 tbsp flour
  • 1 can pineapple, in pieces
  • 6 tbsp soy sauce
  • 10 tbsp vinegar
  • 6 tsp sugar
  • salt and pepper
  • Oil, for frying
  • Sauce thickener

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Make a thick pancake batter from egg, flour, salt, and pepper. Toss the diced chicken in the batter. Fry the chicken in batches (it’s best to place the pieces in the pan one at a time, otherwise they’ll stick together) in a pan with plenty of hot oil until golden brown. Remove from the pan. Toast the sugar in the pan, deglaze with vinegar, soy sauce, and pineapple juice. Thicken with a sauce thickener to create a nice, creamy sauce. Add the pineapple pieces and the chicken and heat until hot. Serve with rice.
