Chickpea fries

Ingredients for 4 servings:

  • 350 g chickpea flour
  • 50 g flaxseed
  • 500 ml soy milk (soy drink)
  • 150 ml mineral water
  • 2 tbsp oil
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Mix all ingredients and pour onto a medium-sized, approximately 20 x 30 cm baking sheet lined with baking paper. Then bake for 15-20 minutes at 200°C (convection oven). Let the batter cool and cut into thin strips, approximately 10 cm long. Fry the pieces in a pan or deep fryer until crispy. If desired, add salt and pepper to the batter or to the fries. They taste especially good with remoulade sauce.
