Ingredients for 4 servings:

  • 1 onion(s)
  • 2 garlic cloves, squeezed
  • 2 bell peppers, red
  • 400 g Hokkaido pumpkin(s)
  • 400 g minced beef
  • 2 spring onions
  • 1 tbsp pumpkin seed oil or vegetable oil
  • 1 small can of tomatoes, chopped
  • 2 tbsp tomato paste
  • 250 ml vegetable stock
  • salt and pepper
  • Cayenne pepper
  • chili powder
  • 1 pinch(s) of sugar
  • 1 tbsp parsley, chopped

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Finely dice the onion and bell pepper, and finely slice the spring onions. Wash the pumpkin, halve it, remove the seeds, and dice the flesh. Brown the minced meat in oil. Add the vegetables and sauté over medium heat. Add the tomatoes, tomato paste, and crushed garlic and mix well. Then pour in the broth. After 15-20 minutes of cooking, season with spices. Sprinkle with parsley and serve. Serve with rice or potatoes, bread, or tortilla chips.
