Chinese beef soup with noodles

Ingredients for 4 servings:

  • 300 g lean beef
  • 200 g Chinese egg noodles
  • 1 bunch of spring onions
  • 200 g broccoli
  • 2 liters of beef broth
  • 6 tbsp soy sauce
  • 2 tbsp oil
  • 1 garlic clove(s)
  • Chili powder or sambal oelek

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

Cut the meat into thin strips, mince the garlic, and finely chop the spring onions. Mix everything well with soy sauce and oil in a bowl and marinate for about 30 minutes. Pour the beef broth into a large pot and bring to a boil. Add the meat and broccoli florets to the pot and simmer over low heat for 15 minutes. Cook the noodles according to the package instructions, then transfer to bowls and set aside. Season the soup with chili powder and soy sauce to taste, preferably hot. Ladle the soup into the bowls with the noodles and enjoy.
