Chinese fried noodles with vegetables

Ingredients for 1 servings:

  • 130 g soba noodles
  • 1 small onion(s), chopped
  • 1 handful of carrot(s), cut into strips
  • 1 handful of leeks, cut into rings
  • 1 handful of sprouts (mung bean sprouts)
  • 1 pinch(s) of salt and pepper
  • 1 pinch(s) of sugar
  • some soy sauce, dark
  • e.g. sesame oil or peanut oil, approx. 1/2 – 1 tsp
  • 1 tbsp oil as desired, for frying
  • 1 tsp peanut butter or peanuts, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the noodles according to the package instructions. Drain. Meanwhile, fry the onions in hot oil in a wok or pan. Once the onions are translucent, add the carrots and leeks and fry briefly. Add the noodles and season with salt, pepper, sugar, and dark soy sauce. Stir constantly and continue frying. Remove the wok or pan from the heat and stir in the mung beans with a little sesame or peanut oil (about 1/2 – 1 tsp). Optionally, stir in chopped peanuts or a teaspoon of peanut butter, depending on your taste and preference.
