Chinese glass noodle salad

Ingredients for 8 servings:

  • 250 g glass noodles or rice noodles
  • 200 g tomatoes
  • 200 g cucumber(s)
  • 400 g chicken breast fillet(s)
  • 30 g pine nuts
  • 165 ml coconut milk
  • 20 ml soy sauce
  • pepper
  • Salt
  • ½ chili pepper(s) if desired

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Deseed half a chili pepper and chop into the smallest possible pieces. Stir together the coconut milk and soy sauce and season with salt and pepper. Add the chopped chili. Simmer the glass noodles in boiling salted water for 4 minutes. Drain well. Toast the pine nuts in a pan without oil. Wash or peel the tomatoes and cucumber, deseed them, and cut into small cubes. Fry the chicken and also cut it into small cubes. Place the vegetables, meat, noodles, and pine nuts in a bowl and mix. Finally, add the coconut soy sauce, stir again, and serve.
