Ingredients for 2 servings:

  • 50 g glass noodles or spaghetti
  • possibly salt water
  • ½ stalk(s) leek
  • ½ bell pepper(s), red
  • ½ zucchini
  • 1 carrot(s)
  • ½ Chinese cabbage or white cabbage
  • 1 onion(s)
  • 1 tbsp oil
  • some tomato paste
  • ½ cup vegetable broth
  • 3 tsp soy sauce
  • Salt
  • Cayenne pepper
  • 1 pack of smoked tofu

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

vegetarian, possibly with tofu

Cook the noodles according to the package instructions. Dice the onion and cut the vegetables into small strips. Heat the oil in a wok or large skillet. Sauté the onion. Add the vegetables and tomato paste and sauté with the lid on for about 5 minutes. Add the broth, soy sauce, salt, and cayenne pepper and continue sautéing (about 10 minutes). Drain the cooked noodles and stir them into the vegetable stir-fry. Dice the smoked tofu and sauté briefly.
