Chocolate Dream with Spiced Plums and Vanilla Sauce (Maximilian Claus)

Ingredients
 

Spiced plums

  • 500 g Plums
  • 1 tbsp Butter
  • 1 tbsp Sugar
  • 1 shot Red wine
  • 1 tbsp Flour
  • 1 Star anise
  • 1 Cardamom pod
  • 1 Cinnamon stick

Vanilla sauce

  • 0,5 Vanilla pod
  • 2 tbsp Water
  • 1 tbsp Sugar
  • 3 tbsp Sour cream

chocolate cake

  • 250 g Butter
  • 250 g Chocolate
  • 125 g Sugar
  • 5 Egg yolk
  • 5 Eggs
  • 125 g Flour

Instructions
 

Spiced plums

  • For the spiced plums (preferably the day before), first caramelize some butter and sugar in a saucepan and add a third of the plums. Then deglaze with red wine.
  • Next, mix some flour with cold water and add to the plums. Now add part of the star anise, cardamom and cinnamon, let everything boil down a little and strain. Add the remaining plums to the stock and leave to stand overnight.

  • For the vanilla sauce, scrape out the vanilla pod and place in a container. Add water and sugar, stir everything together and add the sour cream.

chocolate cake

  • For the chocolate cake, melt the butter and chocolate in a saucepan. Then beat the sugar, eggs and egg yolks until frothy. Pour the flour into the mixture and stir in.
  • Pour this mixture into floured forms (fill 2/3 of the form) and refrigerate. Then bake at 180 ° C for about 8-12 minutes. The cake needs to be a little runny inside.
