Chocolate Dream with Spiced Plums and Vanilla Sauce (Maximilian Claus)

Spiced plums

  • 500 g Plums
  • 1 tbsp Butter
  • 1 tbsp Sugar
  • 1 shot Red wine
  • 1 tbsp Flour
  • 1 piece Star anise
  • 1 piece Cardamom pod
  • 1 piece Cinnamon stick

Vanilla sauce

  • 0,5 piece Vanilla pod
  • 2 tbsp Water
  • 1 tbsp Sugar
  • 3 tbsp Sour cream

chocolate cake

  • 250 g Butter
  • 250 g Chocolate
  • 125 g Sugar
  • 5 piece Egg yolk
  • 5 piece Eggs
  • 125 g Flour

Spiced plums

  1. For the spiced plums (preferably the day before), first caramelize some butter and sugar in a saucepan and add a third of the plums. Then deglaze with red wine.
