Widow Bolte’s Chicken, Stolen from Rapunzel (Lars Steinhöfel)

chicken

  • 8 piece Chicken breast fillets
  • 4 tsp Mustard
  • 8 disc Mozzarella
  • 8 piece Basil leaves
  • 1 shot Olive oil
  • 250 g Pesto

salad

  • 500 g Lamb’S lettuce
  • 2 tbsp Almonds
  • 50 g Sunflower seeds
  • 1 pinch Salt
  • 1 pinch Sugar
  • 1 shot Olive oil
  • 1 shot Balsamic vinegar
  • 250 g Cherry tomatoes
  • 1 piece Cucumber
  • 4 piece Sprigs of basil
  • 50 g Parmesan

  1. For the chicken, place the fillet between 2 sheets of cling film and bring it to a width of 2 cm with a rolling pin or a meat tenderizer.
  1. Cut each piece of fillet in the middle for the filling and spread 1 teaspoon of mustard in each. Put a slice of mozzarella and a large basil leaf in each opening. Secure with toothpicks.
  1. Heat a little olive oil in a pan and fry the meat in it over medium heat for 4-6 minutes on each side. Scoop some pesto over it and serve hot.

salad

  1. Wash, dry and cut the lettuce. Fry the almonds with the sunflower seeds in a little olive oil until golden brown. Season with a little salt and lightly caramelize with sugar.
  1. Pour over the salad and drizzle with a dash of balsamic vinegar. Garnish with cucumber slices, cherry tomatoes, basil and freshly grated Parmesan. Serve with the chicken.
