Chocolate Mishap and Strawberry Ice Cream

- 125 g Butter
- 100 g Dark chocolate couverture
- 25 g Dark chocolate
- 60 g Sugar
- 1 Msp Salt
- 25 g Flour
- 1 Msp Vanilla extract
- 3 Pc. Eggs
- 2 Pc. Egg yolk
- 50 g Sour cream
- 50 g Whipped cream
- 1 tbsp Powdered sugar
- 2 Pc. Fresh passion fruit
- 1 Pc. Orange
- 250 g Strawberries
- 1 tbsp Sweetened condensed milk
- Whip the whipped cream until stiff, then add the sour cream and powdered sugar. Squeeze the orange and let the juice reduce to about half in the saucepan over high heat.
- Heat the butter and melt the couverture and chocolate in it. Mix in sugar, salt, vanilla, flour and eggs. Put the measurements in silicone molds (muffins) and refrigerate for 3 hours. Then bake in the oven at 160 degrees for about 13 minutes, carefully approaching the correct baking time. Let the cake cool for 2 minutes and then turn it out onto a plate.
- Wash, clean and puree the strawberries. Season to taste with the condensed milk and let everything cool down in the ice cream machine for about 20 minutes.
- Garnish with the pulp of the hollowed out passion fruit and the orange juice. Add ice cream and sour cream sauce.
