Chocolate Mousse and Curd Mousse

Ingredients
 

  • 100 g Milk chocolate
  • 100 g Dark chocolate
  • 500 g Quark
  • 50 ml Juice from the orange
  • 2 splash Lemon juice
  • 30 g Sugar
  • 10 Egg Whites
  • 1 Frozen berry mix

Instructions
 

  • Melt the chocolate while whipping the egg whites until stiff. Mix the quark with 30 ml orange juice, lemon juice and sugar. Fold half of the egg white into the quark. Put the quark in a bowl and chill for at least 4 hours. Mix the melted chocolate with the rest of the egg white and place in the refrigerator for at least 4 hours.
  • Thaw the fruits and puree them with the rest of the orange juice and a squeeze of lemon and then strain them through a sieve. Place the chocolate and quark mousse on a plate, add the fruit sauce and serve.
