  • 1 pinch of salt
  • 4 tbsp water, lukewarm
  • 4 tbsp oil
  • 1 packet of baking powder
  • 1,000 g strawberries
  • 500 g yogurt
  • 100 g sugar
  • 400 ml cream
  • 10 sheets of gelatin
  • ½ lemon(s), the juice
  • cream
  • Pistachios, chopped
  • strawberries

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 25 minutes

Separate the eggs and beat the yolks with sugar until frothy. Beat the egg whites with a pinch of salt until stiff peaks form. Stir the oil into the yolk mixture. Mix the flour with the baking powder and cocoa powder and fold into the yolk mixture alternately with the beaten egg whites. Pour the batter into a 26 cm springform pan and bake at 180°C for 25-30 minutes. Let the cake base cool and then cut it in half. Halve about half of the strawberries. Then arrange them on a cake base. For the filling, puree the remaining strawberries (set a few aside for decoration) and soak the gelatin in cold water. Mix the yogurt with the sugar, lemon juice and strawberry puree. Heat a little of the yogurt, dissolve the gelatin in it and mix it back into the strawberry mixture. Whip the cream until stiff peaks form and fold it in when the strawberry mixture starts to set slightly. Spread some of the cream on a cake base and top with the strawberry halves (cut-side down). Spread some more cream over the strawberries to cover them. Top with the second cake layer and spread the remaining cream on top. Place the third cake layer on top. Refrigerate the cake overnight. Whip some cream until stiff and spread it all over the cake. Sprinkle with chopped pistachios. Pipe cream puffs and decorate with strawberries.
