Coconut banana muffins

Ingredients for 1 servings:

  • 1 banana(s)
  • ½ lemon(s), untreated, zest and juice
  • 100 g butter, soft
  • 100 g sugar
  • 3 eggs
  • 150 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 30 g desiccated coconut
  • 50 g chocolate coating

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel the banana, cut into small pieces, and drizzle with lemon juice. Beat the butter, sugar, and lemon zest in a bowl until creamy. Add the eggs one at a time and continue beating. Add the flour, baking powder, and salt and mix to form a smooth batter. Now fold in the banana pieces and desiccated coconut with a wooden spoon. Fill the batter into muffin cups and bake in an oven preheated to 175°C (top/bottom heat) for about 20 minutes. Remove from the oven and let cool on a wire rack. Melt the chocolate coating in a hot water bath and decorate the muffins with it in a lattice pattern.
