Cod in fruity curry sauce

Ingredients for 4 servings:

  • 4 fish fillets (cod) 150 g each
  • 1 lemon(s), the juice
  • 1 sprig(s) rosemary
  • 1 clove(s) garlic, roughly chopped
  • salt and pepper
  • 120 g apples, diced
  • 30 g carrot(s), diced
  • 15 g Celery, diced
  • 1 stalk(s) lemongrass, pounded flat
  • 20 g leek, finely chopped
  • 5 g ginger
  • 5 g garlic, chopped
  • 1 onion(s), diced
  • 100 ml white wine
  • 10 ml vinegar (sherry vinegar)
  • 5 g honey
  • 10 g curry powder (Madras curry)
  • 200 ml cream
  • Olive oil for frying
  • possibly water if needed

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Marinate the fish fillets with lemon juice and season with salt and pepper. Then fry in hot olive oil and add the roughly chopped garlic clove and rosemary sprig. Sauté the finely chopped vegetables, apples, ginger, and finely chopped garlic in hot olive oil. Then add curry powder and deglaze with sherry vinegar and white wine. Add cream and simmer until the vegetables are soft. If necessary, add a little water, then blend and pass through a sieve. Simmer again and season with the remaining ingredients. Arrange the fish on plates with the sauce and serve hot.
