Ingredients for 4 servings:
- 800 g cod fillet(s)
- 1 medium-sized lemon(s), juice
- 1 tbsp flour
- 2 tbsp butter
- ⅛ liter milk
- ⅛ liter cream
- 2 tbsp mustard, medium hot
- ½ tsp salt
- 1 pinch(s) black pepper
- 1 pinch of nutmeg
- 1 tsp sweet paprika powder
- 1 tbsp dill, chopped or parsley
- 1 tbsp Worcestershire sauce
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Preheat the oven to 220°C (top/bottom heat). Rinse the fish fillets with cold water, pat dry, and drizzle with lemon juice and Worcestershire sauce. Grease an ovenproof dish with a little butter. Melt half of the remaining butter in a small pan, add the flour, and sauté until light yellow. Gradually add the milk, then the cream, and simmer gently for a few minutes while stirring to remove some of the flour flavor. Season the sauce with mustard, salt, pepper, and nutmeg. Add the dill or parsley and mix well. Salt the fish fillets on both sides, place them in the ovenproof dish, and sprinkle with paprika. Pour the sauce over the fish fillets and place a few knobs of butter on top. Then place in the center of the hot oven for about 15 minutes. This goes well with mashed potatoes or rice. Tip: Instead of cream, you can also use a little white wine, but first deglaze the flour with the wine and then add the milk.
