Ingredients for 16 servings:
- 8 onions
- 8 cloves garlic

simple, delicious, vegetarian party base with options for different levels of spiciness
When you throw a party, you can never please everyone. For some, it’s too spicy, for others it’s too bland. That’s why the following recipe is designed for three different levels of spiciness in different pots. 1/4 of the total amount is mild, 1/4 hot, and the rest medium. Roughly dice the onions, eggplant, zucchini, bell peppers, and peeled potatoes. Deseed and thinly slice the chilies. In a large pot, sauté the onions and crushed garlic in oil. Briefly fry the potatoes and eggplant. Rinse the lentils and add them to the pot. Deglaze with vegetable stock and simmer for 25 minutes over medium heat. Stir occasionally. Then add the remaining diced vegetables, tomatoes, tomato paste, chickpeas, kidney beans, corn, and bulgur. Season to taste with salt, pepper, paprika, curry, and cumin. For different levels of spiciness, transfer a quarter of the well-mixed contents of the pot to the other two pots. Add the chilies and chili beans to the hot pot. If using a medium-hot pot, season with cayenne pepper and chili flakes. Simmer for another 30 minutes, stirring well. Turn off the heat and let everything simmer, ideally for a few hours. It can also be served immediately if you’re in a hurry. Just before guests arrive, heat gently, season again, and add feta. Onion baguette goes perfectly with it. If you want it vegan, simply omit the feta. It tastes even better the next day!
