Colorful endive salad

Ingredients for 4 servings:

  • 1 head of endive lettuce
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 2 apples, sour
  • 2 oranges
  • 1 grapefruit(s)
  • 2 tomatoes
  • 2 tbsp mayonnaise
  • 2 tbsp yogurt
  • Salt
  • Pepper, white
  • 1 pinch(s) of sugar
  • 1 pinch of ginger
  • 2 tbsp lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

Trim and wash the lettuce and cut into strips. Wash and trim the bell peppers, remove the cores, and cut into thin strips. Peel and quarter the apples, remove the cores, and also cut into thin strips. Peel and segment the oranges and grapefruit. Cut the tomatoes into thin wedges. Place all ingredients in a bowl and mix gently. In a small bowl, combine the marinade ingredients and pour over the salad, gently folding in. Let the salad marinate for about 10 minutes before serving.
