Ingredients for 4 servings:
- 60 g green spelt
- 1 tbsp olive oil
- 1 liter vegetable broth
- 75 g leek
- 75 g carrot(s)
- e.g. chopped parsley

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Medium-coarsely grind the green spelt. Wash the leeks and carrots. Finely slice the leeks and grate the carrots. Heat the oil in a sufficiently large soup pot. Roast the green spelt semolina in the hot oil, stirring constantly, until fragrant. Then add the vegetables, sauté briefly, and pour in the vegetable stock. Simmer over low heat for 20 minutes. Serve with freshly chopped parsley.
