Ingredients for 4 servings:
- 250 g sushi rice or rice pudding
- 300 ml water
- 2 tbsp rice vinegar
- 2 tsp sugar
- 1 pinch of salt
- 200 g edamame, peeled, preferably frozen
- 1 mango(s)
- 1 avocado(s)
- 1 cucumber(s)
- 1 m.-sized carrot(s)
- 1 bunch of radishes
- 125 g wild herb salad or leaf lettuce
- 2 tbsp sesame seeds
- 2 tbsp peanuts, chopped, possibly roasted
- 125 g peanut butter
- 1 tbsp soy sauce
- 1 tbsp tamarind paste (if available) or soy sauce
- 1 tbsp Hoisin sauce (if available) or soy sauce
- 1 tsp Sriracha sauce or other chili sauce
- 1 tsp lime juice
- 1 tsp agave syrup or honey
- 100 ml water, hot
- e.g. garlic or ginger
Instructions
Working time approx. 35 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 50 minutes
Substitute products, fish or meat can be added
Rinse the rice in a sieve under running water until the water runs clear. Then bring the rice to a boil with 300 ml of water, cover, and let it swell over very low heat for 10 minutes. Turn off the stove. Then place two layers of kitchen paper between the pot and lid and let the rice stand on the warm stove for another 15 minutes. In the meantime, heat the rice vinegar. Add the salt and sugar and stir to dissolve the salt and sugar. Transfer the rice to a wooden or plastic bowl, avoiding metal. Add the vinegar and fold in with a wooden spatula, but do not stir. Then set the rice aside to cool. Heat the edamame according to the package instructions and season with salt. Peel and quarter the mango and avocado. Slice, deseed, and quarter the cucumbers. Peel the carrot and cut into strips using a vegetable peeler or julienne cutter. Thinly slice the radishes. Put all the ingredients for the sauce in a screw-top jar, close it, and shake vigorously until you get a smooth sauce. Depending on the type of peanut butter, you may need more hot water. Let the sauce cool down as well. Pour the cold rice into 4 large bowls or soup plates. Arrange the ingredients next to each other on top. It looks better if different colors are placed next to each other: for example, don’t place cucumber, avocado, edamame, or lettuce next to each other. Drizzle 2 tablespoons of sauce over each bowl and garnish with sesame seeds and peanuts. Tip: You can add anything you like to the bowl, for example with seaweed salad, meat substitutes, tofu, fish, or meat. Cooked sweet potato, beetroot, mushrooms, broccoli, or tomatoes can also be added.
