Colorful potato salad

Ingredients for 4 servings:

  • 800 g jacket potatoes, already cooked
  • 3 bell peppers, red, yellow and green
  • 2 eggs, hard boiled
  • 6 gherkins
  • 150 ml cream
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 2 tbsp cucumber water
  • 1 tbsp grainy mustard
  • 1 tbsp broth, granulated
  • salt and pepper

Working time approx. 45 minutes; Total time approx. 45 minutes

Delicious side dish to grilled food

Peel the boiled potatoes and cut into small cubes. Wash, deseed, and finely dice the bell peppers. Peel the eggs and set aside both yolks; they will be finely blended into the salad dressing later. Finely chop the egg whites. Cut the gherkins into small cubes. Combine the dressing ingredients, not forgetting the egg yolks; crush them and mix them in. Pour the dressing over the salad ingredients, mix everything carefully, and let it stand for a while. Season the salad with salt and pepper, if desired.
