Colorful quinoa salad with feta cheese

Ingredients for 4 servings:

  • 1 cup quinoa, colorful
  • 1 pack of feta cheese
  • 1 pack of cocktail tomatoes
  • 1 cucumber(s)
  • 1 lime(s)
  • Chili powder or chili spice mix
  • olive oil
  • salt and pepper
  • 1 onion(s)
  • 1 bunch of parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

The bit at every barbecue party

Prepare the quinoa according to the instructions and let it cool (I simmer it in a little vegetable broth for about 20 minutes). Squeeze the lime and mix it with a little olive oil, the chili, parsley, salt, and pepper. Finely chop the onion and add it. Toss the cooled quinoa with the dressing. Halve the tomatoes and dice the cucumbers (I usually remove the cores so the salad doesn’t get mushy). Dice the feta cheese and carefully mix everything with the quinoa. You can eat the salad right away or let it sit for a while. It’s something different, very healthy, refreshing, and super delicious.
