Ingredients for 4 servings:
- 250 g rice (jasmine rice)
- Water
- 500 g chicken meat, cut into strips
- 1 bell pepper(s)
- 1 zucchini
- ½ carrot(s)
- 3 spring onions
- 2 tomatoes
- 2 garlic cloves
- 2 large mushrooms or 3 – 4 small ones
- Oil for frying
- salt and pepper
- Parsley

First, cook the rice in water according to the package instructions, then drain and cool in a colander. Meanwhile, wash the tomatoes, bell peppers, and spring onions; trim the mushrooms; and peel the carrots and zucchini. Chop the bell peppers, zucchini, half a carrot, spring onions, tomatoes, mushrooms, and garlic cloves into small pieces. Heat a little oil in a pan, fry the chicken strips with the rice and all the vegetables, and season with salt, pepper, and parsley.
