Ingredients for 1 servings:
- 600 g cooked ham (pork cooked ham), in one piece or smoked pork
- 250 g rye flour
- 250 g wheat flour
- 1 packet of dry yeast
- 1 tbsp beetroot
- 2 tbsp olive oil
- 1 tsp salt
- 375 ml water, lukewarm
- possibly dry sourdough, approx. 1 – 2 tbsp
- Caraway seeds
- 1 tsp baking soda (imperial soda)
- 50 ml water

In a large bowl, knead the flour, yeast, beetroot syrup, oil, salt, water, and, if desired, 1-2 tablespoons of dry sourdough using a hand mixer fitted with a dough hook. Knead for about 5 minutes until the dough comes away from the edges easily. Briefly preheat the oven to 50 degrees Celsius and then turn off. Cover the dough with a warm, wet kitchen towel in the bowl and let it rise for 30 minutes in the switched off oven. Using a little flour, knead the dough and press it into a round loaf. Place the meat in the center and shape the dough around it into a round loaf. Place the dough seam-down on a baking sheet lined with baking paper or in a round, cast-iron pot and let it rise in the lukewarm, switched off oven for a maximum of 45 minutes. Make a hole in the bread to allow steam to escape during baking. Optionally, in the meantime, boil 50 ml of water with 1 teaspoon of baking soda and let cool slightly. Before baking, brush the risen bread with a little of the baking soda solution and sprinkle with caraway seeds. Briefly remove the risen bread from the oven and preheat the oven to 200 degrees Celsius. Place a shallow dish of hot water on the bottom of the oven. Place the bread on a baking tray and bake for 55-60 minutes. When tapped, the bread should sound hollow. The bread can be eaten hot or cold. To serve, cut the bread and meat into slices, or cut a cap off the top of the bread, remove the meat, cut it into thin slices, and put it back into the bread. Then everyone can use a fork to scoop out slices and break off a piece of bread.
