Cooked white bean salad with feta cheese

Ingredients for 2 servings:

  • 1 can white beans (400 g)
  • ¾ lettuce(s)
  • 75 g shepherd’s cheese
  • ½ cup whipped cream (100 g)
  • some pepper
  • some nutmeg
  • Oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cut the lettuce into medium-sized strips and the cheese into small cubes. Place the beans in a sieve, strain them, and wash them. Take a wok or a large frying pan, add a dash of cooking oil. Heat the pan to medium-high (7), and then add all the lettuce. Cover the wok and stir the lettuce a few times until it’s quite shriveled. Add half of the feta cheese, the beans, and the heavy cream, and stir. Let everything cook with the lid closed for about 4 minutes. Then add the rest of the cheese, pepper, and nutmeg to taste, and let everything cook for another 4 minutes, uncovered. Stir everything several times. You can also use arugula, for example, or, for non-vegetarians, add diced turkey if you like. It also tastes great! Don’t be put off by the quantity; this dish is very filling.
