Ingredients for 3 servings:
- 150 g couscous
- 300 ml vegetable broth or chicken broth
- 1 onion(s)
- 2 carrots
- 2 stalk(s) Celery
- 10 cherry tomatoes
- 1 pointed pepper, 1 very large or 2 small
- 1 dashes lemon juice, or the juice of half or a whole lemon if desired
- 1 bunch of flat-leaf parsley
- 1 bunch mint, fresh
- 1 tsp sugar
- 1 tbsp curry powder
- ½ tsp cumin
- 1 tbsp butter
- 125 g feta cheese, not a cow’s milk product, but from sheep and/or goat
- 3 tbsp olive oil
Instructions

Finely dice the onion. Cut the carrots into very thin slices (cut very thick carrots in half lengthwise first). Halve the bell peppers lengthwise, remove the seeds, wash them, and cut them crosswise into fine strips. Heat the olive oil and fry the carrot slices with a pinch of salt for about 4 minutes. Add the onions and bell peppers and fry for another 2 minutes. Add the curry, cumin, couscous, and butter, then top up with the vegetable stock. Bring everything to a boil briefly, remove from the heat, and let it simmer with the lid on for 10 minutes. Meanwhile, halve the tomatoes, remove the seeds, and finely chop them. Remove any tough strings from the celery and cut them into thin slices. Finely chop the mint and parsley. When the couscous is al dente, stir in the tomatoes, celery, mint, and parsley. Season the couscous with salt, pepper, sugar, and lemon to taste. Once the salad has completely cooled (after at least 1 hour), stir in the feta cheese – either diced or crumbled. Variation: Zucchini or, if you like, finely diced garlic, previously sautéed with the onions, also tastes delicious. For a more oriental twist, you can increase the amount of cumin and zest an (organic) lemon. Tip: Because the salad is light, easy to prepare (even in large quantities), looks incredibly colorful and appetizing, and is also relatively easy on the wallet, it’s ideal for parties and/or barbecues.
