Ingredients for 4 servings:

  • 250 g couscous
  • 250 ml water
  • 1 medium-sized bell pepper(s)
  • 1 cucumber(s)
  • 1 tsp sambal oelek
  • 100 ml tomato paste
  • e.g. vegetable broth, instant
  • Tomato(s), pureed
  • 1 onion(s)
  • Salt
  • 2 garlic cloves, squeezed
  • some fresh parsley, chopped
  • 50 ml olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pour boiling water over the couscous. Immediately stir in the finely chopped onion and let the couscous swell according to the package instructions. Add the remaining ingredients, stirring in enough tomato puree to achieve a consistency that would make dumplings. Season to taste with salt and instant broth.
