Ingredients for 4 servings:
- 200 g couscous
- 1 cucumber(s), peeled, pitted, sliced
- 4 tomatoes, diced
- 300 g cheese, diced
- ½ bunch spring onions, in rings
- ½ bunch mint, roughly chopped
- 150 g yogurt
- 2 tbsp olive oil
- 1 tbsp lime juice
- ¾ tsp cumin
- salt and pepper
- Sugar
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cook the couscous according to the instructions and let it cool. Then toss the couscous with the remaining salad ingredients. Mix the yogurt, olive oil, and lime juice together to make a dressing. Season with cumin, salt, pepper, and sugar. Drizzle over the salad before serving.
