Couscous with Mince

The perfect couscous with mince recipe with a picture and simple step-by-step instructions.

  • 250 g Couscous
  • 400 Milliliters Water
  • 1 Red pepper
  • 2 Turkish peppers green
  • 4 Vine tomatoes
  • 3 Spring onions
  • 1 Shallot
  • 3 Garlic cloves
  • 1 Chilli fresh
  • 1 Eggplant fresh
  • 3 tablespoon Coriander leaves
  • 600 g Ground beef
  • 4 tablespoon Extra virgin olive oil
  • Lime juice
  • Salt and pepper
  • 300 g Ajvar

preparation

  1. Wash and clean the vegetables, remove the seeds from the peppers. Dice the peppers, eggplant and tomatoes. Cut the spring onions into rings and finely dice the shallot. Rinse the coriander and spin dry. Pluck the leaves from the stems and roughly chop them. Chop the garlic and chilli.
  2. Boil 2,400 ml of water and place in a bowl. Add the couscous and let it swell.

preparation

  1. Put the minced meat in a preheated pan and fry it until it is crumbly, add it to the couscous while hot and mix.
  2. Fry the aubergine in a preheated pan without fat until crispy. Add hot to the couscous and mix.
  3. Add the vegetables, ajvar, garlic, coriander leaves and chilli and four tablespoons of olive oil to the couscous and mix. Season to taste with salt and pepper and a little lime juice.
